Cassoulet is named after cassole d'Issel, the earthenware cooking pot the dish is made in. Cassoulet originated in the Languedoc region of southwest France in Castelnaudary, the self-proclaimed capital of cassoulet. Legend has it that, during the Hundred Years' War in the thirteenth century, the townspeople of Castelnaudary pooled together the contents of their cupboards and created a stew to feed the hungry French soldiers who were defending the territory. Originally, it was simple peasant fare, but it has since become much more complex and rich due to the availability of more quality and varied products. Each piece of Digoin pottery is shaped and glazed by hand by artists in Burgundy, France. The clay used to make Digoin pottery is sourced from French clay and other natural materials from the region. The pottery is fired in a very hot oven at 2282 degrees Fahrenheit to strengthen it and make it non-porous. Digoin pottery is known for its elegance, simplicity and practicality. It is ideal for cooking food because it is impermeable and odors cannot seep in. This cassoulet crock is stamped with the iconic Digoin seal on the bottom. However, the seal cannot be seen in the photo. Measures 13" across, 4.5" deep. 8-quart capacity. The clay cassoulet bowl is microwave and oven-safe, dishwasher-friendly, and suitable for refrigerator and freezer use. To prevent shock that might damage it, allow the bowl to reach room temperature before transitioning between hot and cold. Do not place the bowl over an open flame, including gas stoves.
